don't know how, but I got it to work ... I basically covered all the bases, so
I don't rightly know what was wrong -

entered the clients that would be printing into /etc/hosts
entered the clients that would be printing into /etc/hosts.lpd &
/etc/hosts.allow
turned on logging in lpd (via lpd -l )

voila! all works now ... occasionally get weird issues, (like a log message:
protocol screwup - guessing that's Apple's problem) but all in all, it works.
