I'm assuming you're talking about doing this on the unix side to the
netatalk directories.

The most simple solution is probably to do the same thing on the macos
client side. There are several shareware utilities that do all sorts of
renaming, case changing, etc. functions. "Manipulator" and "Guillotine"
come to mind.
